ROASTED KALE CHIPS! (and my swoirees in the kitchen)
I always refused to learn “how-to-cook” growing up, so as an adult I failed miserably in the kitchen and deemed myself “never to make a good housewife”. (good thing this is NOT what I aspire to be). But as my funds got tight, and so did my jeans…I wanted to both balance my budget and my waistline, and “cooking” at home allowed me to do so. As I try my hand in the kitchen, there’s lots of trial and error, but there’s also lots of experimenting with ingredients which reminds me of chemistry class in High School. I’m no chef that’s for sure, and I can only stick to super simple recipes at the moment (I have a small NYC kitchen, and I am teaching myself these “cooking skills” I now possess), but so far most of my affairs in the kitchen have turned out quite delicious for just how simple they really are. (Dislcaimer to hungry friends: I’m not at the point where I’d allow someone else to try my food just yet…eeek!)
The other night I needed a fast and easy dinner, I tried my hand at Roasted Kale Chips. A satisfying partner to a turkey sandwich, or a great snack all on their own. All you novice kitchen people should give this a try!
Here’s what you need:
- 1 fresh bunch of kale
- 1 to 1.5tbsp Olive Oil
- Seasonings (salt n pepper, I used Garlic Salt)
1.) Rinse the kale, and pat dry with a paper towel
2.) Tear or cut kale into bite-size “chips”, removing the thick middle stem
3.) Drizzle olive oil and sprinkle seasonings (a good amt for taste) over kale. Then mix fervently with hands to really coat the kale chips
4.) Place chips on a baking sheet (I sprayed with nonstick spray first) and place in oven on 350degrees until crisp, about 7-10min (be careful not to burn, keep your eyes on it)
5.) Enjoy! and experiment with different seasonings, I think next time I might top it with a sprinkle of paremsan cheese…good? tasty? I’ll let you know
And I’m hosting an upcoming superbowl party at my friends’ house. I might try to make these Roasted Kale Chips as a healthy snack option for those not interested in my DELICIOUS TACO DIP I’ll also be whipping up!
